Peach and Raspberry Pie

Peach and Raspberry

Ever since my obsession with the show, Pushing Daisies I developed a bit of an obsession with pie. Although now that i'm back on weight watchers, I guess any pie I bake will be for the benefit of my friends.

Anyhow, I never realized how easy it is to do! Here is how.

Step One: Make the crust!

Mix together 2 cups flour, 1 tablespoon salt and 1 tablespoon sugar. Then mix in 1 cup butter or crisco type subsistence. Mix this together until it has a pebbly type consistency as seen below. Once that is done, slowing add in 6 - 8 tablespoons of ice water until the dough will stick together if you pinch it.

Kneed the dough just a few times (DO NOT OVER KNEED) and then separate into  two pieces. With one you will roll it out into a large circle and place it in the pie tin  for the bottom crust.

Lattice top: Roll out the remainder of the dough and slice it into strips. Place these  parchment paper and let sit in the fridge while you prepare the pie filling.

Solid Top: Just place the dough in the fridge while you prepare the filling. Once you are ready, go ahead and roll it out, place on top folding the top crust under the edges of the bottom crust. Then use a fork to pinch it together around the edges. Be sure to cut a few slices in the top to let the steam out while its baking.

Step Two: Prepare the Filling!

The filling is easy for this one. Peel and slice up 4 fresh peaches and toss them with 1 cup fresh raspberries, 1/4 cup sugar, 2 tablespoons flour, and 1 tablespoon cinnamon. Pour the mix into the pie crust.

Step 3: The Top Crust!

Lattice: If you are going to try a lattice crust, take your chilled dough strips out of the fridge. Place the first two strips in an X in the middle of the pie. From here you can create the pattern anyway you like.

Once the lattice is done, use a fork to pinch the edges together. You can lightly beat an egg white and using a pastry brush, lightly coat the dough and then sprinkle raw sugar and cinnamon over the top.


Pop the pie in the oven at 400 F, and bake for about 45 minutes!
