Paleo Pumpkin Cookies!

Long time no post eh? Well I adapted one of Elena's Pantry recipes last night to have a little more spice and cookies instead of muffins. Since Piet and I have been Primal, I've been experimenting with different baked goods and so far this might be my favorite!

Paleo Primal Pumpkin Cookies

Ingredients:

1.5 cups almond meal or almond flour (I use the Trader Joe's brand)

1/4 tsp sea salt

1/2 tsp baking soda

1.2 tsp ground cinnamon

1/2 tsp ginger

1/2 tsp nutmeg

2 TBSP grapeseed oil

1/2 cup agave

2 eggs

1 cup organic canned pumpkin, or fresh pumpkin

few handfuls of walnut pieces or other nut

Method:

Combine all the dry ingredients in a medium bowl.

Combine all the wet ingredients in a smaller bowl and mix until smooth.

Stir the wet ingredients into the dry until mixed well.

Drop large TBSP's full of the batter into a cookie sheet lined with parchment paper. Should make about 18 cookies.

Bake for 16 minutes at 350 degrees.

Viola guilt free cookies you can munch on through the holidays!
