Piet sent me this recipe from another blog who had made a cake with it, but I thought I would try cupcakes instead. These are super fun to make, and would make a perfect project for kids, a birthday party....or for an unemployed 24 year old adult...right?
All you need is:
1 box of white cake (any brand will do)
12 oz per box of cake of soad
Gel food coloring
You can make the batter per the box instructions, OR you can substitute the eggs and oil/butter with 12 oz of any soda (I used 7Up but i'm curious about Ginger Ale as well). Sounds crazy, but totally works.
Mix in the soda with the boxed ingredients, and mix until smooth.
Then measure out equal amounts of the batter into 6 bowls. You don't have to be precise. Then mix in the gel food coloring combing colors to get purple and orange.
Fill each paper about 2/3rds of the way full and bake at 350° F for 10 - 12 minutes. And viola! Rainbow cupcakes!
