Black Bean Burgers

This is one of my favorite recipies, and it makes 8 patties so you can put the rest in the freezer and pull them out for a quick meal.


Black Bean Burgers

  • 1 carrot, diced

  • 15 oz can black beans, drained & rinsed

  • 1/2 cup chopped bell pepper (red or green)

  • 1/2 cup chopped onion

  • 1 cup salsa

  • 1/s cup - 1 cup oats or brown rice

  • 1/2 cup whole wheat flour

  • 1/2 tsp black pepper

  • salt

  • red pepper flakes (optional)

Pre microwave carrots to soften.

Mash beans and carrot in large bowl. Mix in bell pepper, onion, salsa, oats & flour. Season with salt, pepper & red pepper flakes. Add more oats if mix is to wet.

Form into 8 patties and cook on a skillet about 8 minutes each side. When heating up frozen patties, you can bake them in the oven at 400 for 10 minutes.
